Qaliya
Ingredients
- Mutton ½ kg
- Onion chopped 1 cup
- Tomatoes chopped 2
- Green chilies chopped 3
- Cloves 4
- Green cardamom 4
- Black pepper whole 6
- Yogurt ½ cup
- Oil ½ cup
- Cinnamon 2 small sticks
- Coriander powder 1 tsp
- Cumin crushed 1 tsp
- Fennel seed 1 tbsp
- Whole mix spices 1 tbsp
- Ginger garlic paste 1 tbsp
- Chili powder 1 tbsp
- Turmeric ¼ tsp
- Wheat (soak in water overnight) 4 tbsp
- Salt 1 ½ tsp
Method
- Heat ½ cup oil, add 1 cup chopped onion and fry light golden, make a spice bag with 1 tbsp fennel seeds and 1 tbsp whole mixed spices, add 1 tbsp ginger garlic to the brown onion with 1 tsp crushed cumin, 1 tbsp chili powder, ¼ tsp turmeric, 1 tsp coriander powder and 2 chopped tomatoes.
- Fry well, add in 6 whole black pepper, 4 cloves, 2 cinnamon and 4 green cardamoms, also add in prepared spice bag, 1 ½ tsp salt, ½ kg mutton and 4 tbsp soaked wheat.
- Fry well, add 2 ½ cups of water, cover and cook over slow flame till mutton gets tender, add ½ cup yogurt, fry well, simmer till oil comes on top.
