Qaliya


Ingredients
  • Mutton ½ kg
  • Onion chopped 1 cup
  • Tomatoes chopped 2
  • Green chilies chopped 3
  • Cloves 4
  • Green cardamom 4
  • Black pepper whole 6
  • Yogurt ½ cup
  • Oil ½ cup
  • Cinnamon 2 small sticks
  • Coriander powder 1 tsp
  • Cumin crushed 1 tsp
  • Fennel seed 1 tbsp
  • Whole mix spices 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Chili powder 1 tbsp
  • Turmeric ¼ tsp
  • Wheat (soak in water overnight) 4 tbsp
  • Salt 1 ½ tsp
Method
  1. Heat ½ cup oil, add 1 cup chopped onion and fry light golden, make a spice bag with 1 tbsp fennel seeds and 1 tbsp whole mixed spices, add 1 tbsp ginger garlic to the brown onion with 1 tsp crushed cumin, 1 tbsp chili powder, ¼ tsp turmeric, 1 tsp coriander powder and 2 chopped tomatoes.
  2. Fry well, add in 6 whole black pepper, 4 cloves, 2 cinnamon and 4 green cardamoms, also add in prepared spice bag, 1 ½ tsp salt, ½ kg mutton and 4 tbsp soaked wheat. 
  3. Fry well, add 2 ½ cups of water, cover and cook over slow flame till mutton gets tender, add ½ cup yogurt, fry well, simmer till oil comes on top.
