Lemon Cilantro Rice


Ingredients 
  • Rice boiled 2 cup
  • Lemon 1
  • Salt to taste
  • Crushed black pepper as required
  • Cilantro / coriander ¼ cup
  • Turmeric ¼ tsp
  • Oil as required
Method
  1. Wash and soak rice. In a pot of boiling water add the 1/4 tsp of turmeric along with a generous pinch of salt and boil the rice till done. Add a tbsp of oil as well to stop rice from sticking. 
  2. Drain the water and spread the rice on a tray to dry out. In a pan heat the butter and oil add the lemon zest followed by the rice and flash fry for a minute. 
  3. Season to taste Remove from heat add the lemon juice and fresh cilantro. Toss well to combine.
