Rocky road


Ingredients
  • Cooking chocolate 300 gm
  • Marshmallows 100 gm
  • Chocolate cookies 100 gm
  • Sooper biscuits 100 gm
  • Butter 125 gm
  • Icing sugar 1 tsp
  • Light Corn syrup 3 tbsp
Method
  1. Heat butter and chocolate along with the corn syrup in a saucepan until smooth. remove from heat and remove 1/2 cup of the chocolate and keep aside. 
  2. Crush the biscuits and cookies into bits and not crumbs. Add to the saucepan with the chocolate.
  3. Cut marshmallow into 4 pieces if not using mini marshmallows and add them to pan. Stir around. Pour the mixture onto a slightly greased 9 inch pan and smooth the top with a wet spatula. 
  4. Pour the remaining chocolate on top and keep in the fridge for about 2 hrs or until set. Dust with icing sugar before serving
