Pumpkin Soup


Ingredients
  • Butter 2 tbsp
  • Oil 1 tbsp
  • Onion finely chopped 1 medium
  • Garlic chopped finely 2 cloves
  • Pumpkin chopped 3 cups
  • Potatoes cubes 1 ½ cups
  • Stock 1 ½ cups
  • Nutmeg a pinch
  • Salt to taste
  • Black pepper to taste
  • Chopped tarragon 1 tsp
  • Milk 1 ½ cups
  • Lemon juice 1 tsp
Method
  1. Heat oil in a cooking pot add the garlic sauté for a minute or so and then add the chopped onions sauté till transparent then add the butter stir well to combine. Now add the vegetables and shut the lid and allow them to cook on low heat until tender make sure you remember to stir them occasionally to prevent sticking. 
  2. Stir in the stock, nutmeg, tarragon, salt and pepper and bring to a boil. Leave it to simmer for 10 mins until vegetables are completely cooked. Allow the soup to cool and then blend into a smooth puree.
  3. Return to the cooking pot and add the milk. Heat slowly adds check seasoning for salt and peppers add the lemon juice in the end and serve with a dollop of cream.
