Penne Arrabiata


Ingredients
  • 200 gm Dried penne
  • 1 can of chopped tomatoes
  • 3 tbsp Olive oil
  • Butter 2 tbsps
  • Pitted black olives a handful
  • 2 Garlic cloves, chopped
  • 1 or 2 Small red chillies finely chopped
  • Crushed red chillies to taste
  • Fresh basil 6-8
  • Salt
  • Black pepper
  • Pinch of sugar
  • Grated parmesan, to serve
  • Fresh parsley to serve
Directions
  1. In a pot of boiling water add salt and oil along with pasta and cook the pasta as mentioned on the packet but do not over bowl. Drain well and remove in a bowl and toss the hot pasta with the butter.
  2. Heat the olive oil in a frying pan. Add the chilli and garlic to the pan. After about a minute, add the basil leaves and gently wilt them in the flavored oil. 
  3. Then add the chopped tomatoes and cook for afew minutes. Season with salt, pepper, sugar and leave to simmer for 3 to 4 minutes. 
  4. Then add the chopped olives and some fresh basil leaves.Pour over the pasta and serve garnished with parmesan and fresh parsely.
