Christmas Cupcakes


Ingredients
  • Butter 100 gm
  • Dark brown sugar 175 gm
  • Eggs 2
  • Sultanas a handful tossed in flour
  • Raisins a handful tossed in flour
  • Flour 150 gm
  • Bi carb of soda 1/2 tsp
  • Baking powder 1 tsp
  • Pinch of cinnamon
  • Pinch of nutmeg
  • Sour cream 3 tbsp
  • Boiling water 100 ml
  • 75 gm Dark chocolate
  • 1 tsp Instant coffee
Ingredients Royal Icing
  • 1 1/2 cup Icing sugar
  • 1 Egg White
  • 1/2 tsp Lemon juice
Method
  1. Preheat oven to 200 C or gas mark 6 in a large bowl cream the butter and sugar until light and fluffy. add the eggs one at a time beating well after every addition.In another bowl sieve the flour with the baking powder,bi carb of soda, cinnamon and nutmeg. 
  2. Now add the flour mixture gradually to the butter mixture alternating with the sour cream. Until well combined.in a sauce pan heat the coffee along with the water and add the chopped chocolate. Stir through till well melted. 
  3. Pour this into the cake batter and mix until just combined. carefully spoon this mixture into the paper cases and bake for 20 minutes or until done. Allow the cupcakes to cool in the baking tray for 5 minutes before cooling completely.
  4. For the icing sieve the icing sugar in a bowl and add the beat egg and beat well until peaks form. then add the lemon juice and stir well using a wooden spoon. make sure u cover the icing with a tight cling film to keep it airtight.
