Chicken Shashlik


Ingredients
  • Chicken 500 gms cubes
  • Red chilli powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Garlic paste 1 tsp
  • Ginger paste 1/2 tsp
  • Salt to taste
  • Crushed black pepper to taste
  • Tomato paste 1 tbsp
  • Yogurt 2 tbsp
  • Lemon juice 2 tbsp
  • Chopped coriander 1 tbsp
  • Oil 2 tsps
  • Cumin powder 1/4 tsp
  • Tomatoes 2 cut into squares
  • Capsicum 1 cut into squares
  • Potato 1 par boiled cut into cubes
  • Onion 1 cut into squares
Method
  1. Beat the yogurt, tomato paste, red chilli powder, turmeric powder, salt, pepper, oil, cumin powder and pepper together until well mixed. Add the ginger and garlic paste and mix well. Add the chicken into the marinade add lemon juice and coriander and coat well. 
  2. Leave chicken in marinade for atleast 1 hour. Soak wooden skewers in cold water. Thread chicken and vegetables onto the skewers and coat with remaining marinade. Grill in the oven, on the griddle or then on a coal grill till cooked and serve with fried rice.

Fried rice

Ingredients
  • 1 1/2 cup Rice boiled
  • Garlic 2 cloves finely chopped
  • Carrot 1
  • Green onion 2
  • Capsicum 1/2
  • 1 egg
  • Salt to taste
  • Soya sauce 1 tsp
  • Chicken cube 1/4
  • Black pepper to taste
  • Oil as required
Method
  1. In a wok heat oil add garlic then add carrot cook for 1 minute then add the capsicum and then add the chicken cube cook for a minute then add the soya sauce and seasoning to taste saute and add green onions and rice and toss well. 
  2. Move the rice to one side then add the beaten egg allow the egg to set and then scramble well and toss into the rice. Mix well and season to taste.
