Christmas Slices


Ingredients for Base
  • 6 ounces Flour
  • 4 ounces Butter
  • 2 ounces Sugar
  • 2 ounces Currents
  • 2 ounces Glazed cherries red and green finely chopped
Ingredients for Topping
  • 2 Eggs
  • 4 ounces Butter
  • 4 ounces Sugar
  • 1 cup Almonds ground
  • ½ tsp Vanilla essence
Method for base
  1. Beat 4 ounces butter well, add in 2 ounces sugar and beat till light and creamy, add in 6 ounce flour and form into a soft dough, keep in fridge for 30 minutes, take a 8 inches square pan, greased with butter and line with butter paper, spread the dough evenly, sprinkle 2 ounces currents and 2 ounces chopped cherries on top.
  2. Method for Topping, Beat 4 ounce butter and 4 ounce sugar well, add 2 eggs one at a time, beat well, add in 1 cup ground almonds with ½ tsp vanilla essence, mix well, and pour this filling mixture on top of the base, bake on 180 degree for 30 minutes. Remove and cool, cut in slices and serve.
