Spicy Spanish kebabs
Ingredients
- 300 gm Mutton boneless cut into cubes
- 1 1/2 tbsp Fresh parsley
- 2 cloves Garlic
- 1/4 tsp Black peppercorns
- 1/2 tsp Pink or red peppercorns (optional)
- 1/4 tsp Ground cumin
- 1/4 tsp Paprika
- 1/4 tsp Cayenne pepper
- 1 Juice lemon
- 1 tbsp Olive oil
- Salt to taste
Method
- Chop the parsley, crush the garlic clove along with the pink and black peppercorns. In a glass bowl combine the cumin, cayenne pepper, paprika, salt, lemon juice and oil along with the crushed garlic and peppercorns. Add parsley.mix well together.
- Add the meat cubes and coat well with the marinade. Cover and refrigerate for 2-3 hours or overnight. Soak 4 wooden skewers in cold water for 15 minutes. thread the pieces of meat on the skewer.
- Reserve the marinade. Grill on a charcoal grill or a grill pan basting the kebabs with the marinade occasionally until cooked.
