Prawn Chilli Dry


Ingredients
  • 250 gms Prawns
  • 1 tsp Rice vinegar
  • 2 tbsp Cornflour
  • Coarse Sea salt
  • Crushed Black pepper
  • Crushed Red Chillies
  • 4 Green chillies deseeded and halved
  • 1/4 tsp Sugar
  • 3 Garlic cloves finely chopped
  • 1 cm Ginger piece grated
  • 1 tsp Soya sauce
  • Oil to fry the prawns
  • 2 Green onion chopped
Method
  1. Marinate the prawns in vinegar, salt, black pepper, crushed red chillies for about 15 minutes. Then add the cornflour and toss well. Heat oil in a wok add the prawns and fry till golden. Remove on a kitchen towel and drain. 
  2. Remove excess oil from the pan leaving only 1 tsp of oil. Place it back on the fire and add the garlic, green chillies salt pepper then add the prawns and stir fry for afew second then add a dash of soya sauce and sugar and season according to taste. serve hot on a bed of chopped green onions.
