Gajar ki kheer


Ingredients
  • 1/2 kg Carrots
  • 1 cup Ground rice
  • 2 kg Milk
  • 1 1/2 cup Sugar
  • 1/2 tsp Cardamom powder
  • Kewra essence as required
  • ½ ounce Khoya
  • Almonds and pistachios as required
Method
  • Wash and boil the carrots in a sauce pan. Then blend them to a fine paste.Heat the milk, over a medium low flame, in a separate saucepan and add the rice.When the rice is done add the carrot paste, sugar and cardamom powder. 
  • Cook for 10 minutes. When the mixture slightly thickens turn the flame off.Add the kewra and khoya and gently mixes.Pour into a dish and garnish with slivered almonds and pistachios.
