Tarragon Chicken Bake


Ingredients
  • 200 gm Chicken
  • 2 Carrots
  • 10 florets Cauliflower about
  • 2 tbsp Tarragon fresh
  • 1/4 cup Green peas
  • 4  Potatoes boiled and mashed
  • Salt to taste
  • Black Pepper to taste
  • Crushed Red Chillies to taste
  • Olive Oil as required
  • 2 tbsp Butter
  • 3 cloves Garlic crushed and chopped fine
  • Fresh parsley to garnish
Ingredients for the Sauce
  • 2 tbsp Butter
  • 2 tbsp Flour
  • 1 cup Milk
  • 1/2 cup Cream
  • Salt
  • Crushed Black pepper
  • 1 tbsp  Fresh Tarragon chopped
  • Crushed Red chillies to taste
Ingredients for the Topping
  • 3 tbsp Butter
  • 5 tbsp Bread crumbs
  • 1 tbsp Grated Parmesan cheeese
  • Fresh Herbs chopped
Method
  1. For the potatoes mash them with 2 tbsps butter and 1/4 cup milk, salt and pepper to taste and chopped fresh tarragon or parsley.
  2. To make the chicken heat oil and butter in a pan add the garlic then the chicken pieces and saute till it changes color then season with salt, pepper, crushed red chilles and chopped fresh tarragon.
  3. Rremove the chicken in a plate. add some more oil to the pan then add the cauliflower, carrots, peas a dash of water or chicken stock, a generous pinch of salt and some black pepper and chopped tarragon. saute the vegetable for 3 to 4 minutes and take out of pan mix with the chicken.
  4. To make the sauce heat butter in a pan add the flour and saute for 3 minutes till fragrant then add the milk and whisk through to avoid any lumps then add the cream and season with salt, pepper, fresh tarragon and crushed red chillies and combine well.
  5. In an oven proof dish lined with butter add the sauted chicken and vegetables, pour the sauce over and then finish with a layer of the mashed potatoes. Sprinkle some bread crumbs and fresh herbs along with some parmesan cheese over the potatoes and bake in a preheated oven till golden on top about 15 minutes. serve with some crusty bread.
