Mushroom Pilaf


Method
  • 150 gm Button mushrooms fresh
  • 100 gm Oyster mushrooms fresh
  • 5 to 6 Dried porcini mushroom soaked in 1/2 cup warm water
  • 60 gm Butter
  • Salt to taste
  • Black Pepper to taste
  • 1 tsp Fresh Thyme chopped
  • 1 tsp Fresh Rosemary chopped
  • 1 tsp Fresh Oregano chopped
  • Fresh Parsley to garnish
  • 1 cup Par Boiled short grain rice
  • 3 cloves Garlic
Method
  1. Heat butter in a pan with a dash of olive oil add the garlic and sauté till fragrant then add the mushroom and sauté till tender add the salt and black pepper along with herbs.
  2. Then add the rice in the pan along with the mushroom water leftover from the soaked mushrooms. toss to combine well. 
  3. Leave to simmer on low heat for 5 to 8 minutes and serve with freshly chopped parsley sprinkled on top!
