Mushroom Pilaf
Method
- 150 gm Button mushrooms fresh
- 100 gm Oyster mushrooms fresh
- 5 to 6 Dried porcini mushroom soaked in 1/2 cup warm water
- 60 gm Butter
- Salt to taste
- Black Pepper to taste
- 1 tsp Fresh Thyme chopped
- 1 tsp Fresh Rosemary chopped
- 1 tsp Fresh Oregano chopped
- Fresh Parsley to garnish
- 1 cup Par Boiled short grain rice
- 3 cloves Garlic
Method
- Heat butter in a pan with a dash of olive oil add the garlic and sauté till fragrant then add the mushroom and sauté till tender add the salt and black pepper along with herbs.
- Then add the rice in the pan along with the mushroom water leftover from the soaked mushrooms. toss to combine well.
- Leave to simmer on low heat for 5 to 8 minutes and serve with freshly chopped parsley sprinkled on top!
