Herb Fish Parcels
Ingredients
- 2 beckti fillets 150 gm each approx
- 1/2 Lemon zest of lemon
- Sea Salt to taste
- Crushed Black pepper to taste
- 1 tsp Fresh Oregano chopped
- 1 tsp Fresh Parsley chopped
- 1 tsp Fresh Thyme chopped
- Olive oil
- 8 to 10 Capers
- 2 tbsp Lemon juice
- Crushed Red Chilli flakes to taste
- 2 cloves Garlic crushed and minced
Method
- Mix all the ingredients other than the fish together. place the fish in the marinade and leave to rest in the fridge for an hr before baking. preheat oven to 200 C.
- Place fish in foil parcels and spoon the marinade on top. place in oven and bake for 10 minutes. take the try out and open the face and cook for a further 5 minutes.
- Serve with sauted vegetables or some salad for a healthy meal!
