Thai chicken with peanut sauce


Ingredients
  • 1 Cauliflower chopped
  • 2 Lemon
  • 2 Green onion chopped
  • 3 Capsicum cubes
  • 6 Chicken fillet
  • 8 Fresh red chili
  • 1 tsp Brown sugar
  • 1 tbsp Ginger garlic paste
  • 2 tbsp Coconut milk
  • 2 tbsp Soya sauce
  • Salt to taste
Method
  1. Heat oil in a wok, add 6 chicken fillets and stir fry till the water left by the chicken dries.Remove the fillets and heat another 2tbsps of oil. Add 1tbsp ginger garlic paste,3 diced capsicums and 1 chopped cauliflower. Stir fry all the vegetables.
  2. In a cup squeeze the juice of two and add 2 tbsp peanut butter, 2tbsp coconut milk, 2tbsp soya sauce and 1tsp brown sugar.Mix all the ingredients together until a thick sauce is formed.
  3. Add the chicken to the stir fried vegetables and pour the sauce over .Sprinkle with freshly crushed red whole chillies , cover and cook for 2 -3 minutes.
  4. The thai chicken with peanut sauce is ready
