Thai chicken with peanut sauce
Ingredients
- 1 Cauliflower chopped
- 2 Lemon
- 2 Green onion chopped
- 3 Capsicum cubes
- 6 Chicken fillet
- 8 Fresh red chili
- 1 tsp Brown sugar
- 1 tbsp Ginger garlic paste
- 2 tbsp Coconut milk
- 2 tbsp Soya sauce
- Salt to taste
Method
- Heat oil in a wok, add 6 chicken fillets and stir fry till the water left by the chicken dries.Remove the fillets and heat another 2tbsps of oil. Add 1tbsp ginger garlic paste,3 diced capsicums and 1 chopped cauliflower. Stir fry all the vegetables.
- In a cup squeeze the juice of two and add 2 tbsp peanut butter, 2tbsp coconut milk, 2tbsp soya sauce and 1tsp brown sugar.Mix all the ingredients together until a thick sauce is formed.
- Add the chicken to the stir fried vegetables and pour the sauce over .Sprinkle with freshly crushed red whole chillies , cover and cook for 2 -3 minutes.
