Pickled pumpkin
Ingredients
- 500 grams Pumpkin
- 1 Tomato
- 2 to 3 Green chili
- 1 cup Steam rice
- 1 tbsp Aniseed
- 1 tbsp Red chili powder
- 1 tbsp Garlic chopped
- ¼ tsp Dried mango powder
- ½ tsp Fenugreek seed
- ½ tsp Onion seed
- ½ tsp Mustard seeds
- ½ tsp Coriander powder
- ½ tsp Cumin powder
- ½ tsp Turmeric powder
- 2 to 3 tbsp Olive oil
- Mint for garnish
- Salt to taste
Method
- Heat oil in a pan and put ½ tsp of fenugreek seeds, ½ tsp of onion seeds, ½ tbsp of aniseed and ½ tsp of mustard seeds to fry. Now add and fry 1tbsp of chopped garlic with 2-3 green chilies.
- Then add pieces of pumpkin, 1tbsp of aniseed, 1tbsp of red chili powder, ¼ tsp dried mango powder, ½ tsp of fenugreek seed, ½ tsp of onion seeds, ½ tsp of mustard seeds, ½ tsp of coriander powder, ½ tsp of cumin powder and ½ tsp turmeric powder and mix well.
- Now cook for 4-5 min on low flame and add sufficient amount of water and cover the lid. Mix tomato and add pumpkins and cook it on high flame till it tender.
- In the end dish it out and garnish with mint leaves. Serve it with steam rice.
