Orange Upside Down Cake


 
Ingredients for Base:
  • Butter 2 oz.
  • Brown Sugar 2 oz.
  • Orange Segments as required
  • Hung Curd ½ cup
  • Oil ½ cup
  • Flour 1 ½ cup
  • Baking Powder 1 ½ tsp
  • Caster Sugar 6 oz.
  • Orange Juice ¼ cup
  • Eggs 3
  • Orange Zest 1 tbsp
Method:
  • Grease a 9 inch pan and add in melted butter.Add brown sugar and brush the sides also with the same mixture. Arrange orange segments on the base. Sieve together flour, baking powder and salt in another bowl. Beat together sugar, oil and eggs. Don’t over beat. Fold in the dried ingredients, alternating with the orange juice. Pour in the pan with the segments. Bake for 30 to 35 minutes on 180 degrees. Serve with thin custard.
