Jam Sandwich Cookies


Ingredients:
  • 250 g butter, softened
  • 1/2 cup caster sugar
  • 1 teaspoon vanilla bean essence
  • 3 egg yolks
  • 2 cups plain flour, sifted plus additional 1/4 cup
  • 1 tbsp lemon zest
  • Strawberry jam/ganache for filling
  • Icing sugar for dusting
Method:
  • Mix butter, sugar and vanilla in a bowl,beat with electric mixer until light and creamy.Add egg yolks and mix until combined.Add the lemon zest in it.Stir in 2 cups of flour for a soft dough, or 2¼ cups of flour for a firm dough.Remove from the bowl,tie it into a cling sheet and chill in refrigerator for about 30 minutes.Roll the dough out on a lightly floured work surface until it is about 1/4-inch then, using the plain round cutter, cut the dough into round cookie.Take 1/2 of the cookies and cut holes out of the centre of each, like little round windows.Bring the discarded scraps together and make more disks and cut holes in the centre of these.Place the cookies on baking trays and bake in the oven for 8 to 10 minutes until pale golden and ever so slightly firm.Allow to stand for a couple minutes, then remove the cookies from the trays and transfer to wire racks to cool.When the cookies are cool, spread 1/2 to 1 teaspoon jam/ganache on the whole cookie and top with the cookie with hole in them so that you can see the jam through the little windows.Dust with icing sugar (confectioners') and serve.
