Mixed grain and herbs salad
Ingredients:
- Parsley Chopped ½ Bunch
- Mint Chopped ½ Bunch
- Cucumber Chopped in cubes 1
- Capsicum chopped in cubes 1
- Carrot chopped in cubes 1
- Tomato Chopped in cubes 1
- Pumpkin Seed ¼ cup
- Slivered almonds ½ cup
- Spring Onion Sliced finely 2 springs
- Currants ¼ cup
- Combine ingredients to make salad
- Combine dressing ingredients and season to taste with salt, Dress the salad before serving to taste and if there is excess dressing , it can be stored in the fridge for up to a week.
