Shab degh
Ingredients:
- 1 cup oil
- 500 grams minced meat
- 500 grams mutton
- Sal t as required
- Red chili powder 2 tsp
- Turmeric 1tsp
- Coriander 2 tsp
- 1 tsp all spice powder
- Nutmeg, mace 1 tsp
- Green chilies 2-3
- Coriander leaves 1 bunch
- Ginger garlic paste 2tsp
- Ginger chopped for garnishing
- Yogurt 1 ½ - 2 cups
- Onions 300 grams
- Carrots 500 grams
Method:
- Chop mince with nutmeg, mace, 1 onion, 1 large spoon of yogurt, 2-3 green chilies, 1 tsp red chili powder, turmeric, coriander, ginger garlic paste, coriander leaves. Shape them into koftas and keep them aside.Fry 1 onion till light golden in color.Blend fried onion with 1 ½ tsp ginger garlic paste, salt, 1tsp red chili powder, 1tsp turmeric, coriander powder and with little water.Put it in a pan and fry till the oil comes on top.Add the mutton till it gets a boil, then add koftas with 2 cups of water and cook till meat half way done .Add the carrots, cook till gravy thickens and carrot tenders.Garnish it with all spice powder, coriander leaves and ginger and serve.
