Sumatran Chicken


Ingredients
  • Chicken breast 2
  • Oil 3 – 4 tbsp
  • Coconut milk 1 cup
  • Flat noodles ½ packet
  • Bean sprout ½ cup
  • Boiled eggs 2
  • Bean curd sliced 2
  • Coriander leaves chopped ¼ bunch
  • Spring onion chopped 2
  • Fresh red chilies chopped 2 – 3
  • Lemon juice 1 tbsp
  • Ginger garlic paste 1 tbsp
  • Onion 1
  • Turmeric ½ tsp
  • Fresh cream 2 tbsp
  • Leek 1 medium piece
  • Celery stick 1 medium piece
  • Salt to taste
  • Black pepper powder ¼ tsp
Method

  • Heat 3 – 4 tbsp oil in a wok, add 1 tbsp ginger garlic paste and 2 sliced chicken breast, sauté till its color is changed.Then add in ½ tsp turmeric, salt to taste, ¼ tsp black pepper powder, 1 cup coconut milk, chopped leek and chopped celery stick. Cook for 2 – 3 minutes.Now add boiled noodles, bean sprout, fried bean curd, chopped coriander leaves, chopped spring onion leaves and chopped fresh red chilies. Mix well and cook for 2 – 3 minutes.Lastly add lemon juice, fresh cream, chopped boiled eggs and chopped onion. Mix well and serve with boiled rice/sauté vegetable.
