Hokkien Noodles


Ingredients
  • Oil 3 tbsp
  • Egg 2
  • Garlic 4 cloves
  • Egg noodles ½ packet
  • Glass noodles ½ packet
  • Bean sprout 1 cup
  • Prawns 200 gm
  • Chicken breast (juliennes) 1
  • Spring onion 2
  • Fresh red chilies 3 – 4
  • Cabbage ¼ piece
  • Capsicum 1
  • Lemon juice 1 – 1 ½ tbsp
  • Lemon skin ½ tsp
  • Salt to taste
  • Black pepper powder ½ tsp
Method
  • Heat 3 tbsp oil in a wok, add 4 cloves of chopped garlic and chicken breast cut into juliennes, sauté till golden brown.Now add 200 gm prawns and fry for 2 – 3 minutes. Then add 1 sliced capsicum, 2 sliced spring onions and ¼ piece of chopped cabbage. Fry well for 2 – 3 minutes.Beat 2 eggs and add to the vegetable mixture, do not mix and let it cook for a few minutes.Now flip the egg and cook the other side.Now add ½ packet boiled egg noodles, ½ packet soaked rice noodles, 1 cup bean sprout, salt to taste, ½ tsp black pepper, lemon juice, lemon skin and chopped fresh red chilies.Mix well, dish it out and serve hot.
