Peach and Cinnamon Crumble


Ingredients:
  • 120 grams butte
  • 120 grams brown sugar
  • Rind of 1 lemon
  • 4 egg yolks
  • 100 grams flour
  • 80 grams whole wheat flour
  • 3 ml salt
  • 8 ml baking powder
  • Peach sliced 10-15
For topping:
  • 100 grams flour
  • 80 grams whole wheat flour
  • 3 ml ground cinnamon
  • 1 ml grated nutmeg
  • Ground cloves a pinch
  • 90 grams brown sugar
  • 120 grams butter
Method:
  1. Beat the butter, sugar and rind all together until light and fluffy. Then beat in egg yolks until creamy.Sift all the dry ingredients and gently fold in the creamed mixture.
  2. Now put the creamed mixture onto a baking tray then put the peach slices on the top of it.Then for topping combine flour, spices and stir in sugar, rub in the butter until mixture is crumbly.  
  3. Then sprinkle over the peaches and bake for 20-25 minutes.
