Crostini Mutton Liver


Ingredients
  • Oil 3 tbsp
  • Oil for fry
  • Onion 1 medium
  • Celery stick 1
  • Carrot 1 small
  • Garlic 2 – 3 cloves
  • Mutton liver ½ kg
  • Lemon juice 1 tbsp
  • Tomato paste 2 tbsp
  • Parsley chopped ¼ bunch
  • Water ¼ cup
  • Salt to taste
  • Black pepper powder ¼ tsp
  • French bread 1
  • Green chilies 3 – 4
Method
  • Heat 3 tbsp oil in a pan, add 2 – 3 cloves of chopped garlic and 1 chopped onion, fry till onion is tender.Now add ½ kg chopped mutton liver, fry for 1 – 2 minutes.Now add water, cover and cook for 6 – 8 minutes.Then remove lid, add 1 chopped celery stick, 1 chopped carrot and 3 – 4 chopped green chilies.Also add 1 tbsp lemon juice and 2 tbsp tomato paste. Fry well for 1 – 2 minutes.
  • Now add chopped parsley, salt according to your taste and ¼ tsp black pepper powder. Fry well over high flame. Remove from fire and keep aside. Cut French bread into slices and deep fry till golden brown.
  • Remove from oil and arrange in a serving tray.Top with a spoonful of liver mixture, garnish with tomato cubes and cucumber cubes, serve hot.
