Pistachio biscotti
Ingredients
- Flour 2cups
- Baking powder 1/2tsp
- Sugar 3/4cup
- Butter unsalted 4 ounce
- Salt 1/4tsp
- Eggs 3
- Coarsely chopped Pistachios 3/4cup
Method
- Preheat oven to 180C .Line a baking sheet with butter paper. Sieve flour and baking powder. Beat butter sugar and salt till fluffy.Gradually add 1 egg at a time alternating with sieved flour. Lastly add the left over flour and mix till it forms into a smooth dough. Fold in pistachios and beat for 30 secRemove and form into a shallow log shape. Bake for 30-35 minutes .Remove and cool completely.Cut into diagonal biscotti .Re bake for 15 minutes until crisp.
