Vegetable Minestrone Soup


Ingredients
  • Garlic chopped 1 clove
  • Onion chopped 1 medium
  • Carrot (cubed) 1
  • Beetroot 1
  • Celery stick chopped 1
  • Tomatoes boiled 2
  • Water 2 glasses
  • Boiled peas ¼ cup
  • Spaghetti ½ packet
  • Cabbage chopped 1 piece
  • Coriander chopped 1 tbsp
  • Ghee 1 tbsp
  • Black pepper powder ¼ tsp
  • Salt to taste
Method
  • Heat 1 tbsp ghee in a pan, add 1 chopped onion and 1 clove of chopped garlic. Fry well till golden brown.Now add 1 carrot cut into cubes, 1 chopped celery stick, 1 beetroot and ¼ cup boiled peas. Cook for 2 – 3 minutes.Then add 1 medium piece of chopped cabbage, 2 glasses of water, salt to taste, 1 knorr chicken cubes and 2 boiled tomatoes.
  • Let it cook till it comes to a boil.Add ½ packet of spaghetti and cook till spaghetti is soft.Lastly add ¼ tsp black pepper powder and 1 tbsp chopped coriander leaves. Serve hot.
