Vegetable Minestrone Soup
Ingredients
- Garlic chopped 1 clove
- Onion chopped 1 medium
- Carrot (cubed) 1
- Beetroot 1
- Celery stick chopped 1
- Tomatoes boiled 2
- Water 2 glasses
- Boiled peas ¼ cup
- Spaghetti ½ packet
- Cabbage chopped 1 piece
- Coriander chopped 1 tbsp
- Ghee 1 tbsp
- Black pepper powder ¼ tsp
- Salt to taste
Method
- Heat 1 tbsp ghee in a pan, add 1 chopped onion and 1 clove of chopped garlic. Fry well till golden brown.Now add 1 carrot cut into cubes, 1 chopped celery stick, 1 beetroot and ¼ cup boiled peas. Cook for 2 – 3 minutes.Then add 1 medium piece of chopped cabbage, 2 glasses of water, salt to taste, 1 knorr chicken cubes and 2 boiled tomatoes.
- Let it cook till it comes to a boil.Add ½ packet of spaghetti and cook till spaghetti is soft.Lastly add ¼ tsp black pepper powder and 1 tbsp chopped coriander leaves. Serve hot.
