Thai Rice Pudding


Ingredients
  • Brown sugar 250 gm
  • Rice 300 gm
  • Coconut milk 300 ml
  • Egg 3
  • Vanilla essence few drops
  • Sugar 2 tbsp
  • Cocoa powder 2 tbsp
Method
  • In a wok put 1 cup water, 2 tbsp cocoa powder, 150 ml of coconut milk and 250 gm brown sugar. Cook well and then add 300 gm rice in it.Cook till rice comes on top. Turn the flame off.Spread boiled rice in an oven proof dish.
  • In a bowl beat 3 eggs, add remaining 150 ml of coconut milk, 2 tbsp sugar and few drops of vanilla essence.Spread beaten eggs on top of rice mixture.
  • Now bake in a preheated oven on 200 degrees for 15 – 20 minutes.Then remove from oven, cool and serve.
