Mexican Caramba
Ingredients
- Fish fillet 300 gm
- Corn 1 cup
- Onion chopped 1
- Ginger chopped 1 piece
- Green Capsicum chopped 1
- Red capsicum chopped 1
- Zucchini 1 small
- Boiled tomatoes 3
- Garlic chopped 3 cloves
- Cheddar cheese ½ cup
- Crushed black pepper 1 tsp
- Coriander leaves chopped 2 tbsp
- Lemon juice 2 tbsp
- Chili garlic sauce 2 tbsp
- Butter 2 tbsp
- Salt to taste
Method
- Slightly boil 300 gm fish fillets and keep aside.Heat 2 tbsp butter in a wok, add 1 piece of chopped ginger, 3 cloves of garlic, 1 chopped onion, 1 chopped green capsicum, 1 chopped red capsicum, 1 chopped zucchini, 3 boiled chopped tomatoes, 1 cup corn, 2 tbsp lemon juice and cook for 2 – 3 minutes.
- Then add 2 tbsp chili garlic sauce and salt to taste.Simmer for 4 – 5 minutes.Now add boiled fish and mix well.Lastly add ½ cup grated cheddar cheese and 2 tbsp chopped coriander leaves. Mix well and serve.
