Red Rice Pudding with Peach
Ingredients
- Rice 200 gm
- Coconut milk 200 ml
- Sugar 250 gm
- Peaches 1 tin
- Red jelly 2 packets
- Vanilla essence few drops
- Red food color 1 tsp
- Water 1 ½ glass
Method
- Soak 200 gm rice for 1 hour. Now boil soaked rice with 1 ½ cup water, 1 tsp red food color and few drops of vanilla essence.When the rice starts rising add 250 gm sugar and 200 ml coconut milk. Cook over low flame.
- In another pan boil 2 packets of red jelly with 1 cup water for few minutes. Now add jelly mixture to the rice and mix well.
- Now add 1 tin chopped peaches to the rice and mix well. Keep few chunks of peaches aside for garnish.Dish it out, garnish with peach chunks and serve chilled.
