Polka dot cookies


Ingredients for cookies
  • Soft butter 4 ounces
  • Sugar ½ cup
  • Egg 1
  • Orange juice 2 tbsp
  • Orange rind 1 tbsp
  • Flour 2 cups
  • Baking powder 1 ¼ tsp
  • Salt ¼ tsp
Ingredients for chocolate frosting
  • Chocolate chips ¼ cup melted
  • Butter melted 1 tbsp
  • Milk 1 tbsp
  • Icing sugar ½ cup
Method for cookies
  • Beat butter and sugar in a bowl until light and fluffy.Add in the egg, orange juice and orange rind.Combine flour, salt and baking powder and gradually add to cream mixture. Mix well, cover and refrigerate for 30 minutes, divide dough into half, roll out into 8 inch thick dough .
  • Cut with a floured 2 inch round cutter and place in a baking tray 2 inches apart.Bake for 10 to 12 minutes on 180 degree C, remove and cool on wire rack.
  • Combine all the frosting ingredients until smooth, place in a reseal able plastic bag and cut a small hole in the corner.Pipe polka dot cookies with this frosting bag and serve
