Lavender T cup cakes
Ingredients
- Caster sugar 4 ounce
- Butter 4 ounce
- Flour 3 ounce
- Semolina 1 ounce
- Baking powder 1 tsp
- Vanilla essence 1 tsp
- Milk 2 tbsp
- Blueberry jams 4 tbsp
- Fresh cream for decoration
- Dried blue berries 4 tbsp
- Eggs 2
Method
- Beat butter and sugar till light and fluffy. In a separate bowl sieve together flour and baking powder.Mix in semolina add egg 1 at a time in the butter mixture alternating with sieved flour mixture .
- Then add the vanilla essence, milk and fold in the blue berries.Pour mixture in cup cakes mold, bake on no.4 180 degrees for 25 minutes
- Remove and cool. Scoop out a small amount of each cake to create a small hollow, put 1 tsp of blueberry jam in each hollow and cover with the scooped cake piece.
- Beat the fresh cream, stiff. Put into a piping bang, pipe swirls of cream on a top of each cup cake, and place a blue berry on top of each.
