Lavender T cup cakes


Ingredients
  • Caster sugar 4 ounce
  • Butter 4 ounce
  • Flour 3 ounce
  • Semolina 1 ounce
  • Baking powder 1 tsp
  • Vanilla essence 1 tsp
  • Milk 2 tbsp
  • Blueberry jams 4 tbsp
  • Fresh cream for decoration
  • Dried blue berries 4 tbsp
  • Eggs 2
Method
  • Beat butter and sugar till light and fluffy. In a separate bowl sieve together flour and baking powder.Mix in semolina add egg 1 at a time in the butter mixture alternating with sieved flour mixture .
  • Then add the vanilla essence, milk and fold in the blue berries.Pour mixture in cup cakes mold, bake on no.4 180 degrees for 25 minutes
  • Remove and cool. Scoop out a small amount of each cake to create a small hollow, put 1 tsp of blueberry jam in each hollow and cover with the scooped cake piece. 
  • Beat the fresh cream, stiff. Put into a piping bang, pipe swirls of cream on a top of each cup cake, and place a blue berry on top of each.
