Lemon meringue tartlets


Ingredients for short crust
  • Butter 4 ounce
  • Flour 8 ounce
  • Caster sugar 2 ounce
  • Vanilla ½ tsp
  • Egg yolk 1
Ingredients for filling
  • Caster sugar 4 ounce
  • Butter 4 ounce
  • Egg yolk 5
  • Lemon juice 2 tbsp
Ingredients for meringue
  • Egg whites 2
  • Caster sugar 2 ounce
Method for short crust
  • Beat butter and caster sugar till light and fluffy add vanilla and egg yolk, fold in flour, mix slightly with finger tips and form into a dough, Roll dough cut with cookie cutter, spread in tart tray, bake on 180 degres C for 15 minutes till light golden, remove and cool.
Method for filling
  • In a souce pan put together butter and caster sugar and cook on low flame, remove from fire and add in egg yolks, mix well with a whisk, put to cook on low flame, stirring continuously till one boil come and mixture Is thick, remove and cool .Fill tartlets with lemon filling, pipe top with meringue in standing position, dust top of meringue generously with icing sugar, bake on high temperature for 5 minutes.
