Fudge filled peanut butter cookies
Ingredients
- Creamy peanut butter ½ cup
- Shortening ½ cup
- Granulated sugar ½ cup
- Brown sugar ½ cup
- Egg 1
- Flour 1 1/3 cup
- Baking powder 1 tsp leveled
- Baking soda ½ tsp leveled
- Chocolate chips 1 cup
- Creamy peanut butter ¼ cup
Method
- Pre heat oven to 190 degree C, beat ½ cup ½ cup peanut butter, ½ cup shortening, ½ cup granulated sugar and ½ cup brown sugar until light and fluffy add in 1 egg, beat until smooth, fold in 1 1/3 cup sieved flour, 1 tsp baking powder and ½ tsp baking soda, mix well, shape dough into 48 1 inch balls on un greased cookie sheet. Place balls 1 inch apart, flatten balls with a fork in a crisscross pattern, bake for 10 minutes until light golden, remove and cool completely. Microwave 1 cup chocolate chips on high for 1 minute until soft and smooth; add ¼ cup peanut butter, sandwich pair of cookies, and bottoms together with 1 tsp chocolate mixture.
