Fudge filled peanut butter cookies


Ingredients
  • Creamy peanut butter ½ cup
  • Shortening ½ cup
  • Granulated sugar ½ cup
  • Brown sugar ½ cup
  • Egg 1
  • Flour 1 1/3 cup
  • Baking powder 1 tsp leveled
  • Baking soda ½ tsp leveled
  • Chocolate chips 1 cup
  • Creamy peanut butter ¼ cup
Method
  • Pre heat oven to 190 degree C, beat ½ cup ½ cup peanut butter, ½ cup shortening, ½ cup granulated sugar and ½ cup brown sugar until light and fluffy add in 1 egg, beat until smooth, fold in 1 1/3 cup sieved flour, 1 tsp baking powder and ½ tsp baking soda, mix well, shape dough into 48 1 inch balls on un greased cookie sheet. Place balls 1 inch apart, flatten balls with a fork in a crisscross pattern, bake for 10 minutes until light golden, remove and cool completely. Microwave 1 cup chocolate chips on high for 1 minute until soft and smooth; add ¼ cup peanut butter, sandwich pair of cookies, and bottoms together with 1 tsp chocolate mixture.
