Coffee cheese cake


Ingredients for chocolate sponge
  • Eggs 3
  • Sugar 3 ounce
  • Flour 2 ounce
  • Coco 1 ounce
Ingredients for cheese cake mixture
  • Curd cheese 2 cups
  • Condensed milk ½ tin
  • Sugar 4 ounce
  • Coffee 1 tbsp heaped
  • Cream 2 cups whipped
  • Gelatin powder 1 ½ tbsp dissolved in ¼ cup water
Method for sponge
  • Beat 3 eggs with 3 ounce caster sugar till light and fluffy fold in 2 ounce sieved flour and 1 ounce coco mixture, spread mixture in a well greased two 8 inches sandwich pan bake for 20 minutes till done, remove and set aside.
Method for filling
  • Beat 2 cups curd cheese with ½ tin condensed milk and 4 ounce caster sugar till creamy add in 1 tbsp dissolved coffee, 1 ½ tbsp dissolved gelatin, 2 cups whipped cream.
To assemble
  • Spread a layer of chocolate sponge in a 8 inch loose bottom pan, moist with sugar syrup, half mixture of filling again sponge layer, remaining cheese cake mixture, set till firm, decorate with swirls of fresh cream, sprinkle with coffee granule. Serve chilled.
