Mocha Cup Cake


Ingredients
  • Butter 5 ounces
  • Egg 4
  • Fine sugar 2 cups
  • Flour 2 cups
  • Warm water ¾ cup
  • Chocolate melted 100 gm
  • Baking powder 1 tsp
  • Instant coffee 1 tbsp
  • Salt ½ tsp
  • Vanilla essence 1 ½ tsp
Ingredients for Mocha Cream Butter Icing
  • Butter 4 ounces
  • Icing sugar sifted 2 cups
  • Instant coffee 1 tsp
  • Milk 1 tbsp
  • Melted chocolate 2 tbsp
Method for Cup Cakes
  1. Preheat oven to 180 degrees, line muffin pan with baking cups, mix 1 tbsp instant coffee with ¾ cup warm water and keep aside, beat 5 ounces butter and 2 cups sugar until light and fluffy, add eggs 1 at a time, mix well, add 100 gm melted chocolate, 1 ½ tsp vanilla essence and coffee mixture, mix all well, sieve together 2 cups flour, 1 tsp baking powder, mix with ½ tsp salt and slowly add to butter mixture, mix well, spoon into baking cups, bake for 20 minutes, cool on a wire rack. Decorate with mocha cream butter icing.
  2. Method for Mocha Cream Butter Icing ,Beat 4 ounces butter until light and fluffy, gradually add sugar ½ cup at a time, add 2 tbsp melted chocolate, 1 tbsp coffee and ½ tsp vanilla essence. When all sugar has been mixed and icing will appear dry, add 1 tbsp milk and beat until fluffy.
