Lemon Achar


Ingredients
  • Lemon 1/2kg
  • Mustard oil 1/2kg
  • Crushed garlic 1 clove
  • Curry leaves 6
  • Turmeric powder 1tsp
  • Nigella seeds 1tsp
  • Fenugreek seeds 1tbsp
  • Rye 1tbsp
  • Cumin 2tsp
  • Red chili powder 2tsp
  • Salt 1tsp
Method
  1. Rub 1/2kg lemons on brown paper. Wash cut them into four pieces.Heat a griddle and toast 1tsp cumin, 1tsp nigella seeds, 1tsp fenugreek seeds,1tbsp rye,1tsp turmeric powder and 2tsp red chili powder .After 2minute add 1tsp salt to the mixture.
  2. In a bowl, mix together the lemons, toasted spices,6 curry leaves,1 clove crushed garlic and 1 cup mustard oil.Now place this mixture into a glass jar and pour the remaining oil over it.
  3. Place the jar in sunlight for one week.The lemon pickle is ready once the lemons become tender.
