Dehli Wala Qorma


Ingredients
  • Oil ¼ cup
  • Onion finely chopped 4
  • Green cardamoms 8
  • Cloves 5
  • Black pepper 6
  • Nutmeg ¼ piece
  • Mace 2 piece
  • Ginger garlic paste 2 tsp
  • Chicken 1 ½ kg
  • Salt 1 ½ tsp
  • Whipped yogurt ½ cup
  • Chili powder 1 ½ tsp
  • Coriander powder 1 ½ tsp
  • Kewra water ½ tsp
  • Saffron ½ tsp
Method
  1. Heat ¼ cup oil, fry 4 finely chopped onions till light golden, remove onion and keep aside. In pan put together 8 green cardamoms, 5 cloves, 6 black pepper, 2 pieces of mace, ¼ piece of nutmeg and 2 tsp ginger garlic paste. 
  2. Fry till light golden, add 1 ½ kg chicken pieces, fry for few minutes. In a bowl, mix together 1 ½ tsp chili powder, 1 ½ tsp coriander powder and 1 ½ tsp salt.
  3. Add this spices mixture to the chicken. Also add ½ cup whipped yogurt with 1 cup water. When chicken is half done, add in crushed brown onion for gravy. 
  4. Lastly add mixture of ½ tsp Kewra and ½ tsp saffron. Cover and simmer for 5 minutes till oil floats on top.
