Cauliflower Qulcha


Ingredients
  • ½ kg flour
  • 1 cup dry milk
  • ½ cup oil
  • 1 tbsp yeast
  • ½ tsp salt
  • Water to requirement
Ingredients for filling
  • ½ kg sliced cauliflower
  • 4 green chilies
  • ½ bunch fresh coriander
  • 50 grams butter
  • ½ cup warm water
  • 1 tsp red chili powder
  • 1 tbsp coriander seeds
  • ½ tsp salt
  • 2 tsp cumin seeds
  • 2 tbsp pomegranate seeds
  • 2 tbsp sesame seeds
Method
  1. Mix ½ kg fine flour with 1 tbsp yeast, ½ tsp salt, 1 cup dry milk, ½ cup oil and water to requirement. Knead to form fine dough and keep covered for 2 hours. For filling, add ½ kg finely sliced cauliflower, 2 tsp cumin seeds, 1 tsp red chili powder, ½ tsp salt, 4 green chilies, ½ bunch sliced coriander, 2 tbsp pomegranate seeds, 1 tbsp coriander seeds and ½ cup water to a pan and cook for 5 minutes.
  2. Make sure water dries up. Now take it off the flame and allow the mixture to cool. Roll kneaded dough into shape of 2 equal rotis and stuff with prepared cauliflower mixture. 
  3. Spread 50 grams butter and sprinkle 2 tbsp sesame seeds on top. Bake in a preheated oven at 200 c for 15 minutes. Stuffed Cauliflower Qulcha is ready to serve.
