South Indian Pickled Raw Mango


Ingredients
  • 1 kg raw mangoes
  • ½ kg mustard oil
  • 2 bulbs of garlic
  • 12 curry leaves
  • 50 grams fenugreek seeds
  • 50 grams poppy seeds
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tbsp red chili powder
  • 2 tsp salt
  • 2 tsp mustard seeds
  • ½ tsp heng
Method
  1. Peel off the skin of ½ kg raw mangoes and cut into small cubes. Crush 50 grams fenugreek seeds and 50 grams poppy seeds. Also finely slice 2 bulbs of garlic. Heat 250 grams mustard oil and add 1 tsp turmeric powder, fenugreek seeds, poppy seeds, garlic, 2 tsp salt, 2 tsp mustard seeds, ½ tsp heng, 1 tsp cumin seeds and 1 tbsp red chili powder and stir together. 
  2. Mix the spices mix with raw mango cubes and add to an air tight jar with 12 curry leaves and remaining oil. Mix the ingredients thoroughly and wrap the jar with a piece of cotton cloth.
  3. Keep it in sun light for a week. South Indian Pickled Raw Mangoes are ready to be served with your favorite meal.
