Pickled Mix
Ingredients
- ½ kg raw mangoes
- 1 kg mustard oil
- 250 grams lemon
- 250 grams carrots
- 125 grams peeled garlic
- 100 grams green chilies
- 1 tsp mustard seeds
- 1 tsp onion seeds
- 1 tsp fenugreek seeds
- 1 tsp fennel seeds
- 1 tbsp red chili flakes
- 1 tbsp turmeric powder
- 1 tbsp salt
Method
- Wash and chop ½ kg raw mangoes, 250 grams lemon, 100 grams green chilies, 250 grams carrots and 125 grams peeled garlic. Mix chopped vegetables and fruit with 1 tbsp turmeric powder and 1 tbsp salt and put on a sieve to drain away excess water.
- Then dry them thoroughly under direct air. Cook 1 kg mustard oil and put aside to allow cooling. Also crush 1 tsp mustard seeds, 1 tsp onion seeds, 1 tsp fenugreek seeds, 1 tbsp red chili flakes and 1 tsp fennel seeds.
- Mix vegetables with crushed spices so that they are properly coated. Fill an air tight jar with spiced vegetables and mustard oil. Cover with a piece of cloth and keep in sun light for one week. Pickled Mix is ready to serve.
