Pickled Mix


Ingredients
  • ½ kg raw mangoes
  • 1 kg mustard oil
  • 250 grams lemon
  • 250 grams carrots
  • 125 grams peeled garlic
  • 100 grams green chilies
  • 1 tsp mustard seeds
  • 1 tsp onion seeds
  • 1 tsp fenugreek seeds
  • 1 tsp fennel seeds
  • 1 tbsp red chili flakes
  • 1 tbsp turmeric powder
  • 1 tbsp salt
Method
  1. Wash and chop ½ kg raw mangoes, 250 grams lemon, 100 grams green chilies, 250 grams carrots and 125 grams peeled garlic. Mix chopped vegetables and fruit with 1 tbsp turmeric powder and 1 tbsp salt and put on a sieve to drain away excess water. 
  2. Then dry them thoroughly under direct air. Cook 1 kg mustard oil and put aside to allow cooling. Also crush 1 tsp mustard seeds, 1 tsp onion seeds, 1 tsp fenugreek seeds, 1 tbsp red chili flakes and 1 tsp fennel seeds. 
  3. Mix vegetables with crushed spices so that they are properly coated. Fill an air tight jar with spiced vegetables and mustard oil. Cover with a piece of cloth and keep in sun light for one week. Pickled Mix is ready to serve.
