Kesari Chicken


Ingredients
  • 1 kg chicken
  • 250 grams onion
  • 250 grams clarified butter
  • 3 cardamoms
  • 6 green chilies
  • 6 almonds
  • ½ kg yogurt
  • 1 tsp cumin powder
  • 1 tsp hot spices
  • 1 tsp turmeric powder
  • 1 tbsp crushed coconut
  • ½ tsp mace and nutmeg powder
  • ¼ tsp saffron
  • 2 tsp red chili powder
  • Coriander as required
Method
  1. In a bowl, add 250 grams clarified butter and 250 grams brown onion. Crush 3 cardamoms, 6 almonds and 1 tsp cumin. In a pan, add chicken and sauté until golden brown. 
  2. Mix together ½ kg yogurt, 1 tsp hot spices powder, ½ tsp nutmeg and mace powder, 1 tbsp grated coconut and ¼ tsp saffron. Also add crushed brown onion. 
  3. Now add yogurt mix to the sautéed chicken and allow cooking on low flame. When chicken is tender, add green chilies and fresh coriander and turn off the flame. Qesari Chicken is ready to serve.
