Jaipuri Dry Fruit Pulao

Jaipuri Dry Fruit Pulao


Ingredients
  • ½ kg rice
  • ½ kg meat
  • 1 onion
  • 1 bay leaf
  • 4 cardamoms
  • 10 cashew nuts
  • 10 apricots
  • 10 almonds
  • 10 pistachios
  • 50 grams plums
  • ½ cup milk
  • ½ cup oil
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp raisins
  • 1 tbsp sugar
  • ½ tsp saffron
  • ½ tsp nutmeg powder
  • 1 tsp black cumin
Method
  1. Heat ½ cup oil and sauté an onion until it turns brown. Then add ½ kg meat, 4 cardamoms, 1 tsp black pepper, ½ tsp nutmeg powder and 1 bay leaf. Stir together on low flame until oil forms a separate layer. 
  2. Then add 4 glasses of water and allow cooking on low flame until meat is tender and half of the water dries up. Now add ½ kg soaked rice and 50 grams plums and allow cooking on low flame for a few minutes or until water dries up. 
  3. Dissolve 1 tbsp sugar and ½ tsp saffron in ½ cup milk and pour over rice. Now allow simmering on low flame. Meanwhile, heat some oil in another pan and fry 2 tsp black cumin, 10 cashew nuts, 10 apricots, 10 almonds, 10 pistachios and 1 tbsp raisins. 
  4. Sprinkle fried dry fruits over rice and serve Jaipuri Dry Fruit Pulao.
