Coconut Pudding
Ingredients
- 6 eggs
- 1 tin coconut milk
- 1 packet cream
- 1 cup ground coconut
- 1 cup sugar
- 2 cups milk
- ½ tsp vanilla essence
- 2 tbsp plain flour
Method
- In a bowl, add 2 tbsp plain flour, 6 eggs, 2 cups milk and 1 cup sugar and beat well. Strain out the mixture from a sieve making sure that solid particles are left behind.
- Then add 1 tin coconut milk, 1 cup ground coconut, 1 packet cream and ½ tsp vanilla essence and beat again.
- Pour the mixture in a baking dish and bake at 200 c for 40 minutes. Tempting Coconut Pudding is ready to serve.
