Coconut Pudding

Coconut Pudding


Ingredients
  • 6 eggs
  • 1 tin coconut milk
  • 1 packet cream
  • 1 cup ground coconut
  • 1 cup sugar
  • 2 cups milk
  • ½ tsp vanilla essence
  • 2 tbsp plain flour
Method
  1. In a bowl, add 2 tbsp plain flour, 6 eggs, 2 cups milk and 1 cup sugar and beat well. Strain out the mixture from a sieve making sure that solid particles are left behind. 
  2. Then add 1 tin coconut milk, 1 cup ground coconut, 1 packet cream and ½ tsp vanilla essence and beat again. 
  3. Pour the mixture in a baking dish and bake at 200 c for 40 minutes. Tempting Coconut Pudding is ready to serve.
