Banana Toffee Cup Cakes
Ingredients
- Softened butter 4 ounce
- Brown sugar 4 ounces
- Self raising flour 4 ounce
- Eggs 2
- Banana 1 mashed
- Vanilla essence ½ tsp
Ingredients for Topping
- Butter 4 ounce
- Condensed milk 4 ounce
- Caster sugar 2 ounce
- Golden syrup 1 tbsp
Method
- Preheat oven to 190 degree C, beat 4 ounce butter and 4 ounce sugar until light and fluffy, add in the 2 eggs alternating with 4 ounce self rising flour, beat until mixture is smooth, fold in 1 mashed banana and ½ tsp essence, divide the mixture between paper cases, bake in the centre of the oven for 15 minutes, remove and cool on wire rack.
- Method for Topping, Melt 4 ounce butter for 30 seconds, stir in the 4 ounce condensed milk, 2 ounce caster sugar and 1 tbsp golden syrup, cook the topping, string all the time till thick slightly, Spread over the cup cake, scatter chocolate sprinkle on top.
