Tomato Fried Rice


Ingredients
  • 300 grams rice
  • 2 eggs
  • 2 spring onions
  • 4 tomatoes
  • 6 cloves of garlic
  • ¼ cup oil
  • ½ cup boiled peas
  • 1 tbsp crushed black pepper
  • Salt to taste
Method
  1. Boil 300 grams rice and keep aside. Blench 4 tomatoes and peel off its skin. In a pan, sauté 6 cloves of garlic in ¼ cup hot oil. When garlic is a nice golden brown, add 2 spring onions, ½ cup boiled peas and tomatoes and stir together for 2 to 3 minutes. 
  2. Then add 2 beaten eggs, boiled rice, salt to taste and 1 tbsp crushed black pepper and increase the flame. Stir together for a few moments. Tomato Fried Rice is ready to serve.
