Roghni Qorma
Ingredients
- Mutton ½ kg
- Yogurt 1 cup
- Cinnamon 1 stick
- Cloves 4
- Cashew nuts 10
- Oil ½ cup
- Crushed coriander 1 tsp
- Salt 1 tsp
- Desiccated coconut 1 tbsp heaped
- Poppy seeds 1 tbsp
- Black cumin ½ tsp
- Green cardamom ground ¼ tsp
- Nutmeg ground ¼ tsp
- Mace ground ¼ tsp
- Ginger garlic paste 2 tsp
- Onion brown and ground 2 tbsp heaped
- Chili powder 2 ½ tsp
Method
- Marinate ½ kg mutton with 1 cup yogurt, 2 tsp ginger garlic paste and 1 tsp salt for 30 minutes heat ½ cup oil, add 4 cloves and 1 cinnamon stick, now add marinated mutton, cover and cook over low flame for 30 minutes.
- Roast 1 tbsp desiccated coconut, 1 tbsp poppy seeds and 10 cashew nuts separately till light golden, remove and grind finely with ¼ cup water, now add this ground Masala to the mutton mixture.
- Also add in 2 tbsp brown onion, 1 tsp crushed coriander, ¼ tsp ground green cardamom, ¼ tsp ground mace and ¼ tsp nutmeg, cook over low flame till mutton tender and oil comes on top. Serve with warqi paratha.
