Roghni Qorma


Ingredients
  • Mutton ½ kg
  • Yogurt 1 cup
  • Cinnamon 1 stick
  • Cloves 4
  • Cashew nuts 10
  • Oil ½ cup
  • Crushed coriander 1 tsp
  • Salt 1 tsp
  • Desiccated coconut 1 tbsp heaped
  • Poppy seeds 1 tbsp
  • Black cumin ½ tsp
  • Green cardamom ground ¼ tsp
  • Nutmeg ground ¼ tsp
  • Mace ground ¼ tsp
  • Ginger garlic paste 2 tsp
  • Onion brown and ground 2 tbsp heaped
  • Chili powder 2 ½ tsp
Method
  1. Marinate ½ kg mutton with 1 cup yogurt, 2 tsp ginger garlic paste and 1 tsp salt for 30 minutes heat ½ cup oil, add 4 cloves and 1 cinnamon stick, now add marinated mutton, cover and cook over low flame for 30 minutes. 
  2. Roast 1 tbsp desiccated coconut, 1 tbsp poppy seeds and 10 cashew nuts separately till light golden, remove and grind finely with ¼ cup water, now add this ground Masala to the mutton mixture.
  3. Also add in 2 tbsp brown onion, 1 tsp crushed coriander, ¼ tsp ground green cardamom, ¼ tsp ground mace and ¼ tsp nutmeg, cook over low flame till mutton tender and oil comes on top. Serve with warqi paratha.
