Mughlai Kofta


Ingredients for Kofta
  • Mince ½ kg
  • Raw onion ground 1
  • Ginger garlic paste 1 tsp heaped
  • Chili powder 1 tsp heaped
  • Roasted & crushed cumin 1 tsp
  • All spice 1 tsp
  • Salt 1 tsp
  • Poppy seeds 1 tbsp
  • Ground almonds 1 tbsp
  • Desiccated coconut 1 tbsp
  • Green cardamom ground ½ tsp
  • Nutmeg ground ¼ tsp
  • Mace ground ¼ tsp
  • Roasted gram 2 tbsp
  • Brown onion ground 2 tbsp
  • Balai or Cream 2 tbsp
Ingredients for Curry
  • Oil ½ cup
  • Yogurt 1 cup
  • Green cardamom 4
  • Cloves 4
  • Black pepper 4
  • Kewra water few drops
  • Ginger garlic paste 1 tbsp
  • Chili powder 1 tbsp
  • Coriander powder 1 tbsp
  • Saffron ¼ tsp
  • Salt 1 tsp heaped
  • All spice ½ tsp
  • Onion brown and ground 4 tbsp
Method for Kofta
  1. Grind together 2 tbsp roasted gram, 1 tbsp poppy seeds, 1 tbsp almonds and 1 tbsp desiccated coconut to a fine powder, grind ½ kg mince well in chopper, mix in 1 ground raw onion, 2 tbsp ground brown onion and add to the mince with all ground Masala, also add in ½ tsp all spice, 1 tsp crushed cumin, 1 tsp salt, 1 tbsp chili powder, 1 tbsp ginger garlic paste, 2 tbsp cream, 4 ground green cardamom, ¼ tsp ground nutmeg and ¼ tsp ground mace, mix everything well, make into balls and keep aside.
  2. Method for Curry , Heat ½ cup oil add 1 tbsp ginger garlic paste, 1 tbsp chili powder, 1 tbsp coriander powder, ½ tsp salt, whole spices, 4 tbsp brown onion ground and 1 cup whipped yogurt, fry well, add 2 cups of water for gravy, when mixture boiling add koftas and cook on low flame till thick and oil comes on top, lastly add few drops of kewra water, ½ tsp all spice and ¼ tsp saffron.
