Vanilla Berry Mousse


Ingredients
  • Cream 1 ¾ cup
  • Egg 2
  • Caster sugar ½ cup
  • Vanilla extract 1 ½ tsp
  • Blue berry as required
  • Caster sugar for sprinkle
 Method
  1. Separate egg yolks from whites. You will not require yolks for this recipe! Beat the egg whites till foamy, add half the sugar and beat well till you get glossy firm peaks.
  2. Whip the cream with the other half the sugar until you get smooth peaks then add the vanilla and beat well.fold in the egg whites.
  3. Pour half way in the serving bowl then layer the sugar dusted blueberries then spoon on some more of the mousse on top and garnish with sugar dusted blueberries and Refrigerate for 4-6 hrs or overnight before serving.
