Chili Con Carne


Ingredients
  • Beef mince 500 gm
  • Bell pepper 1
  • Garlic 2 cloves
  • Red bean 400 gm
  • Tomato chopped 1 can
  • Ground cumin 1 tsp
  • Paprika powder 1 tsp
  • Red chili powder 1 tsp
  • Red chili chopped 1 tsp
  • Marjoram dried ½ tsp
  • Sugar ½ tsp
  • Tomato paste 1 tbsp
  • Beef stock 1 cube
  • Salt to taste
  • Black pepper as required
  • Cinnamon powder ¼ tsp
  • Onion chopped 1
  • Oil 2 to 3 tbsp
Method
  1. Heat oil in a pan add the onions and cook till the onions are transparent then add the garlic, fresh red chili, red pepper, paprika and cumin and cook for a further 3 to 5 minutes. add the cinnamon and stir for a minute then add the mince and cook till the meat changes color and is browned make sure to do this on a high heat. 
  2. Add the stock cube diluted in 350 mls of water and stir well then add the chopped tomatoes, marjoram, sugar and salt n pepper. Stir well to combine then add the tomato paste and stir well. Bring to a simmer then cover and allow it to cook for a further 10 -15 minutes. 
  3. Make sure to keep stirring occasionally to avoid the meat from sticking to the base of the pan in case required add up to 100 mls more water to retain moisture. Then add the beans and stir well. Check to see if you require to add more water. 
  4. Cover and cook for another 8 minutes. Check seasoning and add salt and pepper as required. Turn off the stove and allow the chili to rest for at least 15 minutes before serving. Serve with a generous dollop of sour cream.
