Indonesian Chicken Salad


Ingredients
  • 250 gm Chicken Fillet
  • 1 tbsp Lemon Juice
  • Salt as required
  • Black Pepper as required
  • 2 tbsp Peanut Oil
Ingredients for Dressing
  • 2 cloves Garlic crushed and chopped finely
  • 1 Onion chopped finely
  • 1 Red chilli deseeded and finely chopped
  • 2 cm Piece Ginger
  • 1 tbsp Sesame Oil
  • 125 gms Peanut Butter
  • 3 fl oz Water
  • Salt as required
  • Black Pepper as required
Ingredients for the Greens
  • 1/2 Ice Berg lettuce chopped roughly
  • 1 Carrot cut very fine
  • 2 Celery sticks with leaves cut into slices
  • 1 tbsp Ligtly toasted sesame seeds
Method
  1. Cut the chicken into pieces. season with salt and pepper and lemon juice. Heat oil in a pan and fry the chicken till lightly browned. Remove onto kitchen towel and leave aside to cool.For the dressing heat the sesame oil in a fry pan and add half the onion and ginger fry till transparent and then add the garlic and chilli saute for a minute and add the peanut butter and water. 
  2. Whisk throughly to combine and cook on high heat whisking constantly till creamy . Season with salt and pepper and leave aside to cool.Arrange the vegetables on a plate and add the remaining onion as well.
  3. Layer the chicken pieces on top of the greens and pour over the peanut sauce. Scatter the lightly toasted sesame seeds on top and garnish with the celery leaves.
